I am trying to find out if there are any good books out there that explain how to build coils for motion discriminator type detectors. I would like info on DD, concentric, and co-planar

Nope... wanna write one? The info you're looking for, is mostly in people's heads, and scattered out on various forums, including some that no longer exist.
I did write a Tech Talk column for W&ET a while back, that reviewed the different types of coils, including the 3 you mentioned. But I did not get into how to build them, as that is fairly difficult.
Take a look at some of the IB construction projects on this web site, and read about their coil techniques. Not always great methods, but a place to start.
