I'm going today to a technician who repairs the video camera, he has an oscilloscope. I then test one of these two sensors ... and the surprising thing that he has output a signal very stable and strictly square! it's really confusing !! So where's the problem ! I tested another project with arduino that uses the same sensors (mag-shield) and also the reading on the LCD is unsatble (still unstable reading from 1hz to 100hz). Where is the problem ?!
The common thing between all these experiences is the power ... still same source of 5v ... I will then look at the power supply of 5v.

For very sensitive circuits I always use a current limited Battery that is isolated completely from the AC Mains.

Hmmm that is very strange.
And yes first of all is power supply. But if you use LM78l05 this must be OK. You can use single LM78l05 for sensor and other for digital. Also mag-shield is made like this. So I really don't have idea. If I have board in my lab it is simple to find out.
