Have a look at this place.
I used Ikelite parts many years ago and was very satisfied.
I still have some parts left over if you only need a few.

Ikelite is rugged but pricey. There are cheaper options for rainproof and surfproof, like Otter boxes and such, but if you want a 30+m diver box then options are limited.

On pots & switches, take a look at APM Hexseal boots, they can make most pots & switches waterproof. Be sure to use non-corrosive shafts, tho.

On connectors, Tesoro uses a 16mm connector called an "M16". They used to buy them from Methode who quit making them. Apparently Tesoro doesn't realize that several other companies still make them. There is also smaller versions, M12 and M8 (12mm and 8mm). I like the M12, just the right size and up to 8 pins.

I Don't have a solution for good water proof Plugs.
And its even Worse for Salt water.

However it is fairly easy to make (Or get Custom Manufactured) Magnetic Couplings that will work through a plastic case for Pots and some types of switches.
This results in a perfect water tight seal.

try Bulgin 400 series connectors or something from the Switchcraft range like Conxall.

                    Hex Seal

I think the hex seal & a stainless potentiometer shaft that Carl mentioned is going to be the most affordable for DIY housing controls. I am going to get some to experiment with

Hi friends it is very easy to make a waterproof potenciometer. Cheep Materials. you need :
                      Inox steel A-4 3 mm.
Silicone tube for engine rc aeroplane for oil glow.
                      O-ring inside 2 mm.
Every materials are very easy for you because you can find in the shops.
                      Intructions :
Drill the tap with one 3 mm drill after this drill with a 5mm drill with one 1mm depth more or less
The rest like in the picture.
This sistem puts up with more than 5 bars in the sea 40 meter in depth.
With 2 o-rings maybe it could put up with 10 bars
I had done some test in the sea with one 200 bars air pump and it works ok it resist the salt and the pressure.
