Point is - just about every all-metal detector will be able to detect something as big as cutlery, even the worst conducting stainless steel. Detectors with discrimination are made not to beep on iron-like materials, so it has to be all-metal. Practically every PI detector will do, and all pinpointers including the airport harassment devices will do.

It is possible to make a stainless alloy that is invisible to a particular detector. 20 or 30 yrs ago I had a fork or a spoon that my then-detector (probably my old 6000/d) couldn't detect. I haven't tested cutlery in a long time.

If you want to drop the trash through the coil then probably PI is the way to go. Or, you could make a gate similar to a walk-through security detector and use either PI or VLF. Most VLF projects are ~10kHz but can be modified to run higher.
