Hi,
The answer to your question can be either screened or not screened depending upon the application.
Normally, shielding is done for two reason. The first is to minimize the ground capacitance effect, and the second is to help reduce the noise picked up by the coil. A good shield will reduce external caused noise quite significantly.
Now, if you turn up the delay to the point where the ground signal is no longer present, then the shielding can be eliminated. I think some manufacturers actually do this.
However, if you are planning on using the PI to detect gold objects, then a short delay is necessary. When a short delay is used, the coil should be shielded for best results.
